Cayson is honored to collaborate with Chef Mark Bolchoz, Jr., the Chef and Owner of Cane Pazzo, a neighborhood osteria in Charleston, SC’s emerging Hanahan community. 

Cane Pazzo—Italian for “Mad Dog”—is a deeply personal project for Chef Mark, inspired by his Southern roots, Italian culinary training, and a family legacy of entrepreneurship in Charleston. It’s a place where rustic Italian traditions meet Lowcountry soul, and where every detail, from the handmade pasta to the design of the space, tells a story.

Chef Mark has long trusted Cayson gear in his kitchens, first as a line cook and now as a restaurant owner. When it came time to outfit his team at Cane Pazzo, he knew he wanted aprons that reflected the same craftsmanship, utility, and character that define his food and philosophy. That vision sparked the creation of The MDB Collection, a chef-designed apron line that’s as functional and refined as the osteria it was born from.

Crafted for real-life service and style, The MDB Collection includes thoughtfully designed pieces for both front and back of house, as well as the aspiring home cook. Each apron blends durability with timeless design, featuring curated fabrics, antique brass hardware, and smart pocket layouts—just like you’d find in Cane Pazzo’s own kitchen.
